Wine Profile

Tasting Notes Seavey's 2015 Chardonnay will give great pleasure to our loyal Chardonnay followers. This vintage leads with subtle aromas of grapefruit, honeysuckle and bergamot. A luscious juicy acidity takes over, infused with lemongrass, guava, fresh ginger, and fresh cut apple. The light and delicate mouthfeel of this wine is delightful but a long finish is there as well. As always, you will find Seavey's characteristic light oak and lively minerality.
Vineyard Notes Our Chardonnay blocks are nestled at the lowest elevation of our Estate, down by Conn Creek where they are surrounded on three sides by trees. The resulting environment encourages a crisp Chardonnay with a wide flavor profile that conveys the soil’s minerality and cool location. The 2014/2015 winter was very dry but rains in the spring gave a much-needed drink of water to the vines right at bud break. We harvested our Chardonnay significantly earlier than usual in order to ensure the acidity and freshness of the wine.
Production Notes Aged lightly in French oak (20% new oak), this wine showcases our commitment to a Chablisienne style.
Winemaker Notes This wine was 100% barrel fermented followed by nine months of barrel aging. Malolactic fermentation was not used resulting in a wine with a hidden personality as it is both clean and laser-focused, but very expressive in the mouth.
Food Pairing Notes We recommend serving this Chardonnay lightly chilled to allow its layored flavor profile to be revealed. The wine will pair beautifully with seafood, oysters, and of course our winery favorite – abalone.
