Caravina, a new addition to Seavey Vineyard’s wines, is a blend of estate-grown and estate-produced red wine that is not selected for bottling under either of our varietal labels of Cabernet Sauvignon and Merlot. Seavey Vineyard’s first estate-produced Caravina, the 1999, was made from 100% Cabernet Sauvignon grapes that came from vines planted on several different locations of the south-facing hillside vineyard and was harvested during the first three weeks in October. The 1999 Caravina has opaque ruby/purple color, lush aromas of cherries and prunes, freshness and focus, medium body, good balance of oak and acidity and well-integrated tannins that should allow it to age well for 15 or more years. Winemaking style followed classic Bordeaux methods. Harvested at 24 degrees brix, the juice remained in contact with the skins for an average of 21 days and following malolactic fermentation, was aged in French oak barrels (50% new oak) and bottled on May 24, 2001.
