2018 Mimi’s Rosé
With our signature freshness and bright acidity, this wine is a tribute to Mary “Mimi” Seavey and her incredible vitality and generous spirit. Mimi would have enjoyed this lighter style wine. Entirely estate grown, Mimi’s Rose is a refreshing blend of 71% Cabernet Sauvignon and 29% Merlot, sourced from just a few special rows of our vineyard blocks. Winemaker Jim Duane’s dedication to quality is exemplified in his creation of this clean, crisp wine.
Tasting Notes
Crisp and light, with a youthful bouquet of strawberries and raspberries, your palate will welcome this low-alcohol rosé on a hot summer day. With a bright nose of guava and blood oranges to entice, this rosé flows seamlessly onto the palate. Wonderfully refreshing and clean, this rosé lingers with hints of watermelon and grapefruit zest.
This versatile wine will shine with food. Serve it chilled with seafood or sushi, or with salads—for example, salad niçoise, panzanella or even a salad of watermelon, goat cheese and arugula. It could also be paired with heartier dishes such as cioppino, bouillabaisse, Portuguese lamb stew, or stuffed tomatoes and couscous.
Production Notes
This second vintage began with the early pick of designated Cabernet Sauvignon rows. The grapes were gently whole-cluster pressed, followed by cool fermentation in stainless steel tanks. The Merlot arrived soon after and was gently pressed and left on the skins for two days to capture the classic Merlot flavors of raspberry and strawberry. A second pick addition of Cabernet Sauvignon rounded out the wine, delivering the final body and balanced structure.
