Our Chardonnay is made from 100% Chardonnay grapes grown in the coolest parts of our vineyard, just adjacent to Conn Creek. The year 2012 marks Seavey Vineyard’s 22nd vintage of Chardonnay, sourced exclusively from estate vines. The core of our Chardonnay comes from vines planted in 1981.
This 2012 growing season made for a classic vintage. The weather was warm and even, and the cool Conn Valley nights are key to retaining the acidity of our bright Chardonnay.
The grapes were whole-cluster pressed and fermented in French oak (33% new). Our barreling featured a new experiment: a single puncheon wine barrel sourced from Tonnellerie Rousseau, able to hold all of the juice from our oldest Chardonnay block (500 litres). We are extremely pleased with the flavor and texture imparted by the much larger surface area of the lees in contact with the wine. We relied entirely on indigenous yeast and did not engage malolactic fermentation. The wine was aged in barrel for nine months before bottling in May 2013.
This expressive wine exudes a subtle bouquet of green pear, lemon rind, and honeysuckle layered with roasted almond, fresh brioche, and cinnamon. The finish yields a full mouth feel, smooth with beautiful weight. The resulting wine is wonderfully refreshing -- clean and fresh with crisp acidity.
We recommend serving this Chardonnay slightly chilled to allow the beautiful flavor profile to reveal itself. This wine will pair beautifully with scallops, fowl, delicately seasoned halibut, and of course our winery favorite - Monterey Abalone.
