Comprised of 89% Cabernet Sauvignon and 11% Petite Verdot, our 2006 Cabernet Sauvignon is the twelfth consecutive Seavey vintage produced with the guidance of world-renowned winemaker, Philippe Melka. The grapes were harvested mid-August to mid-October 2006 with low yields from our South facing hill-side vineyard. The rich fruit benefited from a hot summer and a long growing season. In the winery the grapes were sorted, de-stemmed and gently lifted into small tanks for fermentation. The resulting wine was aged in 50% new French oak before being bottled in May, 2008. Production was limited to under 900 cases of 750 ml bottles.
