Seavey Vineyard’s seventh estate-produced Caravina Cabernet, the 2005, was made from 100% Cabernet Sauvignon grapes that came from vines planted on several different locations of the south-facing hillside vineyard. Winemaking style followed classic Bordeaux methods. Harvested at optimal ripeness, the juice remained in contact with the skins for an average of 14 days, with malolactic fermentation occurring in barrel. The wine was aged in French oak barrels (40% new oak) and bottled in May 2007. An incredible bright nose with layers upon layers of cherry, cassis and blackberry, supported by vanilla, cedar, dark chocolate and freshly roasted coffee beans. Mr. Parker calls this wine “supple, sexy and opulent”, and who are we to disagree?
