Seavey Vineyard’s sixth estate-produced Caravina Cabernet, the 2004, was made from 76% Cabernet Sauvignon, 20% Petit Verdot and 4% Cabernet Franc grapes that came from vines planted on several different locations of the south-facing hillside vineyard, and were harvested during between September 9 and October 2. Winemaking style followed classic Bordeaux methods. Harvested at optimal ripeness, the juice remained in contact with the skins for an average of 14 days, with malolactic fermentation occurring in barrel. The wine was aged in French oak barrels (40% new oak) and bottled in May 2006. The 2004 Caravina is soft, deep, rich, concentrated and lush with abundant amounts of chocolate infused blackberry and currant fruit. This full-bodied Cabernet should age well for 10 to 15 years.
