"Caravina is no ordinary second wine. This beautiful offering exhibits notes of sweet Chinese black tea intermixed with hints of white chocolate, black currants, and dried herbs. Elegant and finesse-styled, it is completely different from the powerful, muscular, masculine 2002. It offers outstanding richness, a big, scorched earth, Graves-like note intermixed with black currants, plums, chocolate, and earth. Seavey Vineyard’s fifth estate-produced Caravina Cabernet, the 2003, was made from 83% Cabernet Sauvignon, 14% Petit Verdot and 3% Cabernet Franc that came from vines planted on several different locations of the south-facing hillside vineyard, and were harvested during the first three weeks in October.
Winemaking style followed classic Bordeaux methods. Harvested at optimal ripeness, the juice remained in contact with the skins for an average of 14 days and, following malolactic fermentation, was aged in French oak barrels (40% new oak) and bottled in May 2005.
The 2003 Caravina is soft, deep, rich, concentrated and lush with abundant amounts of chocolate infused blackberry and currant fruit.
