Seavey Vineyard’s second estate-produced Caravina, the 2000, was made from Cabernet Sauvignon grapes that came from vines planted on several different locations of the south-facing hillside vineyard, and was harvested during the first three weeks in October. The 2000 Caravina is elegant, refined and delicious, with lots of sweetness and plump fruit. This full-bodied Cabernet should age well for 10 or more years.
Winemaking style followed classic Bordeaux methods. Harvested at 23.5 degrees brix, the juice remained in contact with the skins for an average of 14 days and, following malolactic fermentation, was aged in French oak barrels (50% new oak) and bottled on April 27, 2002.
