"Mostly Cabernet plantings on its 1870's vinyard. Seavey estate bottles small quantities of Chardonnay and 600-1200 cases of a potentially superb, concentrated, and long-lived Cabernet Sauvignon. All of the wines are aged in small French oak barrels, of which 60% are purchased new from the well-known coopers, Taransaud and Segau-Moreau. Seavey's Cabernet Sauvignons are aged in small French oak casks, of which 60% are new. The 1992 is considerably lighter than the 1990 and 1991. It also exhibits a more noticeable, herbaceous aroma, combined with a less saturated color. It is spicy and medium-bodied, with moderately hard tannin in the finish." Seavey Vineyard’s third estate produced Cabernet, the 1992, a blend of 97% Cabernet Sauvignon and 3% Merlot, has a round, medium-full and wonderfully complex character. It shows excellent flavors and finesse and resembles a great classified growth Bordeaux.
In making the 1992, William Seavey and Gary Galleron followed classic Bordeaux methods. Cabernet grapes from vines planted in 1982 and 1983 on the South-facing hills were harvested at 24 degrees Brix. The juice remained in contact with the skins for an average of 28 days, and, following malolactic fermentation, the wine was aged for twenty-one months in French oak barrels (75% new oak) before being bottled on July 19, 1994.
