Seavey Vineyard’s first estate produced Cabernet, the 1990, was made from 100% Cabernet Sauvignon grapes that came from vines planted in 1982 and 1983 on five different locations of the South-facing hillside vineyard. In 1990, those five hillside blocks yielded only 1.5 tons of grapes per acre, which enhanced the concentration and intensity of the wine.
Wine making style followed the classic Bordeaux methods. Harvested at 24 degrees brix, the juice remained in contact with the skins for an average of 15 days and, following malolactic fermentation, the wine was aged for 30 months in French oak barrels (75% new oak) and bottled in March 1993.
The 1990 Cabernet is a rich, full-bodied wine with a tantalizing nose, breadth of structure and a bouquet that carries through to a graceful and long lasting finish. Enjoyable now, it will continue to improve with age.
