“The opaque black/purple-colored 1997 Cabernet Sauvignon is the finest Seavey Cabernet since the 1991. Production of this 98% Cabernet Sauvignon / 2% Petit Verdot blend is 1,400 cases. The bouquet offers aromas of licorice, jammy cassis, and toast. Sensationally concentrated and multi-layered, this full-bodied, gorgeously symmetrical classic boasts an unctuous texture as well as fabulous length (the finish lasts 50+ seconds). Seavey Vineyard’s eighth estate produced Cabernet, the 1997, was made from 98% Cabernet and 2% Petit Verdot grapes that came from vines planted on several different locations of the South-facing hillside vineyard. The 1997 growing season began with an early, mild Spring and little rain, which allowed for good bloom and fruit set. Higher than average temperatures during veraison and harvest produced an early harvest in the second and third weeks of September, with even, full ripening and concentrated flavors. The 1997 Cabernet has an opaque purple color and offers aromas of jammy cassis and spices. The full-bodied texture is deeply layered with fabulous black fruits complemented by floral and toasty scents. The wine is concentrated and symmetrical, has great length and the ability to age well for 20 – 30 years. Winemaking style followed classic Bordeaux methods. Harvested at 24 degrees brix, the juice remained in contact with the skins for an average of three weeks, and following malolactic fermentation, the wine was aged for 18 months in French Oak barrels (40% new oak) and bottled on May 17, 1999.
