2007 Seavey Cabernet

"The virtually perfect 2007 Cabernet Sauvignon (85% Cabernet Sauvignon and a whopping 15% Petit Verdot) has an inky bluish/purple color, a gorgeous nose of incense, soy, truffles, scorched earth, and gobs of blackberry and cassis fruit. The tannins are gorgeously velvety and the wine very full-bodied, with terrific texture, a multi-layered mouthfeel, and a blockbuster finish with no hard edges. Rating: 96+ Points." 2000 Seavey Cabernet

“The glories of this estate remain its Cabernet Sauvignons.  After retasting the 1994 Cabernet Sauvignon, I was even more impressed.  The 1994 exhibits an opaque purple color and an exuberant yet still young and unformed nose of spice, black fruits and cedar.  Full-bodied with layers of dense, ripe fruit, this rich, full-bodied moderately tannic wine should be at its best in 5 years.  It will keep for 20+ years.” Robert Parker, The Wine Advocate, Dec 1997.

“The 1993 has developed well.  wine possesses a dark saturated purple color, a sweet, truffle, cassis-scented nose, and dense, powerful, full-bodied flavors with considerable glycerin, extract and tannin.  It reveals more sweetness of fruit, as well as a more expansive, chewy texture than it displayed immediately after bottling.  For the 1993 vintage, this is a top-notch effort.  Anticipated maturity:  Up to 2020.”  Robert Parker, The Wine Advocate, Dec 1996.

It also exhibits a more noticeable, herbaceous aroma, combined with a less saturated color. It is spicy and medium-bodied, with moderately hard tannin in the finish." “The 1991 is a massive yet pure Cabernet Sauvignon that can be drunk now but promises to be even better by the turn of the century and last for 20 more years.  Over the Thanksgiving holiday, I did a tasting of top 1991’s and the Seavey came out first in a very competitive lineup.  A small quantity of the 1991 was still exquisite, perhaps even greater than it had been 72 hours earlier.  Amazing!
