2005 Seavey Cabernet

"The wine discloses an inky black/purple color, a gorgeous nose of roasted meats, blackberry and cassis, with a hint of licorice and background underbrush and oak. It is a large-scaled, rich, concentrated wine with high tannins, but fabulous purity and length. Give this wine 3-5 years of cellaring, and drink it over the next 30 years." 2004 Seavey Cabernet

“The brilliant 2003 Cabernet boasts a dense purple color as well as a big sweet nose of scorched earth, crème de cassis, licorice, spice, and a roasted meat-like character. 2001 Seavey Cabernet

Stephen Tanzer notes, “Fascinating, super-ripe nose combines plum, iron, leather, mocha, hot rocks, underbrush, licorice and game, plus a light note of raisining fruit.  Then sweet, pliant and generous with exceptional depth of texture.  Very suave, seamless wine, finishing very long and sweet with huge, broad tannins that coat the cheeks and the front teeth.  Seavey’s flagship wine has performed consistently well.”  Intl Wine Cellar #114.
2005 Seavey Merlot 750ml

The lush nose of ripe blackberries with hints of cedar, clove and dark chocolate gives way to an exceedingly long and rich finish.  The wine's opulence is a signature of the classic 2005 vintage.  To our core Merlot blocks we added Cabernet Sauvignon (20%) and Petit Verdot (5%) from the very top of our vineyard, a portion we call “Masochist Hill” because of its extreme slope.
2007 Seavey Chardonnay

The 2007 Chardonnay was aged in barrels for seven months before bottling on May 2008. The resulting wine is wonderful, with aromas of pineapple and tropical fruits and honeyed melon.  The wine is fuller-bodied and more tightly wound than normal, indicating greater complexities to develop over the next few years.
2004 Seavey Merlot

The 2004 Merlot has an enticing nose of mulberry, coffee and mocha. It exhibits a rich palate of plum, black cherry and cedar with soft tannins. While delicious to drink now, it should age well for many years. Winemaking style followed classic Bordeaux methods. Following fermentation, the wine was aged in French oak barrels (40% new oak) for 18 months before bottling in May 2006.

2001 Seavey Merlot

The 2001 Merlot offers fresh fruit and floral aromas of cherries, violets, truffles and spice.  Integrated and structured with a medium body, it will continue to age well for years. Winemaking style followed classic Bordeaux methods. Following fermentation, the wine was aged in French oak barrels (45% new oak) for 18 months before bottling on June 2003.
2005 Seavey Chardonnay

The grapes were whole-berry cluster pressed and fermented and aged in Burgundian barrels (7 months, 25% new oak) with a combination of indigenous and cultured yeast and without undergoing malolactic fermentation. The 2005 Chardonnay is full bodied and rich with aromas of pear blossoms, honey suckle and straw, and ripe flavors bound together by well integrated oak. Delicious now, it should drink well for years.

""Gorgeous fudge/chocolate notes intermixed with blackberry and cassis, sweet silky tannins, and a long finish with no hard edges make for a delicious wine already showing complexity and best drunk over the next 10 years. "The 2004 Caravina is an up-front, fragrant effort displaying notes of cedar, black currants, white chocolate, coffee, and spice box. Supple-textured with gorgeous levels of fruit, medium body, and a silky finish, it should drink well for 12 years. It is typical of the open-knit, precocious 2004 vintage.
